Thursdays are for Thankful

Thankful for...

Mom, Sister, and Miss Addy joining us for an impromptu dinner last nite. We had a really good time enjoying some tasty food...and laughing our tails off at the antics of one, almost two-year-old.


*I spied this open-faced sandwich in a magazine last week...and couldn't wait to try it out! Everything you need: bread, avocado, asparagus, bacon, eggs, salt & pepper.

1. Toast bread (I did mine in the oven w/ butter...400 degrees for 7 minutes, or so).
2. Mash avocado and spread over bread. I actually had some guacamole already made...so I just used that.
3. Toss asparagus w/ olive oil, salt & pepper...roast in a 400 degree oven for 12 minutes, or so...depending on how tender you prefer. If you line a rimmed cooking sheet w/ foil...this process is very tidy!
4. Layer asparagus and cooked bacon on top of the avocado.
5. Cook up some eggs! Everyone else likes theirs w/ the yolk cooked...but I like mine a bit runny (ewwww....I know!)...so it's totally up to taste buds. Eggs go on top of the sandwich...sprinkle w/ salt & pepper.

I have to say...I really liked this recipe. The other folks here were skeptical, too...but ended up liking the combination. It's also a good way to use up some odds & ends from the fridge. Hope you enjoy! :)

1. A clean house! Just a few minutes during the week is all it takes...why do I think that's so hard??

2. Chalkboard fridge...ever-changing artwork.


3. Crafts. Newest project...wool felting. So cute & easy!

4. Peach crisp (any kind of crisp, really).

Thursdays are for Thankful

Movie nite, Sunday...homemade popcorn, a beggar pup, and The Green Lantern.

Good, sturdy work shoes. Not much to look at...but they make my work day a lot more comfortable.

Still have all my Christmas cards up...they make me smile every time I see them.

Homemade pasta sauce from a friend @ work. Delicious...and made my evening somucheasier...just had to brown some hamburger & cook some pasta. Dinner = made.





Ornamental grass in my landscaping. Looks amazing all year round!

Yummy dinner @ Sister's house. Healthy, delicious...and I didn't have to make it.

Rusty pig. He lives in the front of my house...and was a pure cream color when I got him...almost 9 years ago, now.

Miss Addy...always the star of the show. She decided her mom's dinner was tastier than hers.

Thursdays are for Thankful

Groupon...I may have a slight addiction. This deal was for one of my favorite Mexican restaurants. I def bought it...ok, I bought the limit of 3 per person...


A delightful take on grilled cheese (discovered on Pinterest, of course) using a croissant. Nothing to say but...yumm!

A gorgeous ray of sunshine bursting through the clouds...buh-bye, snow!!

Finally a nite to sit, relax, and clear sme things off of my DVR. Ah....slippers. They're not pretty...but they get the job done.

Thursdays are for Thankful

Leftover stir-fry...so the evening can be more relaxing.


Diet Coke...for obvious reasons :)


Remote start for my car...makes braving the cold a little more bearable.


A bit of sunlight left at 5:20 at nite...summer will be here soon, right?


A snuggly garage for my car...I do not miss scraping windows. How did I do it all those years b/f I had my own house?

Milo...

Goes by a lot of names...pig, piglet, babuh, sweet pea...

The best freebie...EVER!!

Came at the most perfect time...we were hurting from putting my sweet Bandit to sleep.

Is an interesting creature...likes to cram up in the tightest of places...to be safe & secure.

Smells strongly of corn flakes...not sure why.

Wants all the love & attention in the room...but only on his terms.
