Quiche Lorraine (kind of)

I'm sure we all have that one recipe to rely on...when you need something a bit fancier, but also, something truly easy to put together. Mine is quiche...plain & simple. The bones of this recipe come from the trusty BH&G Cookbook--Bridal Edition. B/c I'm me, though...there are some tweaks here & there.



Ingredients:

-2 9-inch frozen pie crusts (deep dish)
-2 cups of bacon cooked & crumbled (ham is good too)
-1 onion (chopped & sauteed)
-2 cups shredded cheese (original recipe calls for swiss, but I use colby jack)
-8 eggs
-4 cups half-n-half (original recipe says whipping cream, but this works just fine and cuts some fat & calories)
-1/4 tsp salt
-1/4 tsp pepper
-1/8 tsp cayenne pepper (if you like)

*The ingredient amounts are to fill 2 pie crusts. If you're only going to make one quiche, just cut them in half. It's so delish, though...you'll wish you made both. ;)


1. Sautee onion. Add spinach and a pinch of salt...let wilt.

2. Layer 1/2 of the cheese in the pie crust; add spinach, onions, & bacon; put the rest of the cheese on top of that; mix eggs, half-n-half, salt, pepper, & cayenne pepper together; pour over other ingredients.

3. Put the quiche on a pan w/sides...just in case there's over-flow. Cook for 15 minutes at 425 degrees...then, reduce heat to 300 degrees and cook for 30 minutes more.

*Amazing tastiness! Good for b'fast, lunch, dinner, snack...you name it. Serve w/a salad...it's the perfect meal...for company, or just yourself. :)
