Now...I know not everyone is a fan of lemon-flavored things. If that's you *shame*...I recommend at least trying these cookies. They're not over-the-top lemon-y...just really refreshing. If nothing else...since they're made w/ a cake mix (cool, right?), you can basically pick your favorite flavor and go from there. I pretty much can't wait to try some other varieties.
-1 box of your favorite cake mix (lemon for me)
-1/3 cup milk (as I type this, I realize I only did 1/4 cup...hahaha. Oh well, they turned out just fine. Our secret, k?)
-1/4 cup margarine
1. Wow...neon! Alright...so really, all that's involved in this cookie prep is softening the margarine...and then combining the first 4 ingredients. Mix, mix, mix. It'll kind of ball up a bit...be warned, though...it's sticky.
2. Next, drop (1 inch) balls of the dough into powdered sugar. I will tell ya...I wasted a lot of powdered sugar on this recipe b/c I wasn't sure how much I needed. 1 cup is probably plenty...maybe even less. You'll just need enough to coat the dough balls (of course...these are so good, you might wish you'd made a double batch, in which case, you'll need more sugar.)
3. Bake at 375 degrees for 10-13 minutes (do not overbake). After having made these...I think I will stick to the lower end of baking time...makes for a chewier cookie.
I'm super-de-duper excited that I asked my
co-worker, Becky, for this recipe! Now I don't have to wait for another treat day @ work...I can whip up a batch any ol' time I want.
