Taco Salad

 I have been excited for dinner all day...taco of my favorites! The hubs already had the peppers & onions sauteed and the taco meat cooked. All that was left was to make the guacamole (finally!!!!) and salsa.

Salsa ingredients: tomatoes, red onion, garlic, salt, and freshly ground pepper. I also added some chopped jalapeno (forgot to add it to the pic). I just threw everything into my handy-dandy food processor...and w/ a couple of *whooshes,* I had some tasty homemade salsa. :)

I added a bit of fresh salsa to my guac (recipe from the other day)...and was ready to dish up some dinner...

All the yummy stuff got piled into a taco salad shell you put on a form and bake...makes the perfect little bowl. It's not super greasy like the kind at Mexican I don't feel
too guilty eating it...
