I <3 soup! There's just no getting around it...it's warm, comforting, and generally stores well. I especially love that last little fact b/c leftovers help free up a couple of my nites during the week. I'm having a couple of friends over tomorrow nite...so of course, I thought soup would be the perfect thing to serve. So...I made a piping-hot pot up tonite...and will have the delicious (and often more flavorful) leftovers with my friends *win win*.
Tonite's recipe is a first for me...a "pin" I'm finally trying out from the am.a.zing...Pinterest!
Ingredients:
1 large onion, chopped
2 cloves garlic, chopped
1lb spinach, fresh or frozen, defrosted
1- 15oz can diced Italian tomatoes
1lb package orzo pasta
2 qts chicken or vegetable stock
2 qts of water
olive oil
*I am laughing as I type out the ingredients list...b/c I just realized I made the recipe w/o the water listed. I wondered why it seemed so thick and why the pasta was sticking. Oh well...the result is still delicious. I'll just claim "artistic license." I also added 1 lb. pork sausage...plus some Italian seasoning. (Now you all know my dirty little secret...I don't follow recipes very well...at all.) :/
Ingredients...oh so yummy!
1. Preheat a large soup pot. Drizzle with olive oil. Add onions and saute until tender. Add garlic and saute for 2-3 minutes. 2. Add canned tomatoes, spinach, (sausage...if you like), chicken or vegetable stock, and WATER. Bring to a boil and reduce heat to medium.
3. Add orzo and cook for 12-15 minutes, or until orzo is tender.
4. Enjoy! I'm having a garlic breadstick with mine...just a little suggestion. :)
Mmmm, it looks and sounds yummy. The garlic breadstick also sounds like a great idea with it. I'm hungry now!
